Honey Tea Cake
1 3/4 cups flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon nutmeg
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup honey
2/3 cup vegetable oil
1/2 cup strongly brewed vanilla red (rooibos) tea
2 eggs
1/4 cup brown sugar, packed
Preheat oven to 350 degrees. Grease and flour a 9×5-inch loaf pan.
In a medium bowl, combine the flour, cinnamon, ginger, nutmeg, baking soda, baking powder and salt. Set aside.
In a small bowl, whisk together the honey, tea and oil. Set aside.
In a large bowl, beat together the eggs and brown sugar. Whisk in the honey mixture. Stir in the flour mixture.
Pour the batter into the prepared pan and bake for 45-55 minutes, or until done in the center.
Yields 8-10 servings.
