Easy Margarita Marinade
Last night for dinner I planned on making chicken & rice. Since I don’t do boring rice, I usually flavor it with chicken broth, herbs and garlic to help give the rice a little pizazz. Unfortunately, I was out of chicken broth. So, I scavenged my kitchen for ideas. That’s when I found it: margarita mix. I used the same recipe below not only to marinade the chicken, but to flavor the rice. The end result: delicious.
1 1/2 cups margarita mix
1/2 cup orange juice
Juice of 2 limes
3 cloves garlic, minced
1 teaspoon red pepper flakes
2 teaspoons Kosher salt
1 jalapeno, diced
1/4 cup cilantro, chopped
In a large bowl, combine all ingredients. Place chicken in marinade and chill for 3-6 hours.
Yields enough marinade for 2-4 pounds of chicken.
