Re-introducing the Grilled Cheese

Because April is National Grilled Cheese Month, (yes, I know, I’m a little late) I’ve decided to post a couple of my favorite variations of this American sandwich classic. I wasn’t specific about what type of bread to use with these recipes, because I’m a lover all of breads and think that any grilled cheese combination will work with most types of breads. Therefore, I leave it up to you to decide!

Spicy Panko-Crusted Zucchini

When I’m feeling snackish – which is just about every waking minute – I crave salty, crunchy, yummy finger foods. Instead of going for a bag of chips, I decided I’d try panko-ing some zucchini. It turned out So good! I make these every time I get that snack food craving as a healthy alternative to junk food.

Mini Blueberry Tarts

There’s a new trend with cookie dough these days – using it as a crust for tarts and cups. As someone who can’t stand traditional pie crusts, using cookie dough instead has not only been exciting for me, but inspirational! These mini blueberry tarts are very simple to make and are so incredibly delicious.
