			<content:encoded><![CDATA[<p>Since yesterday was national Blueberry Pancakes Day, I decided to create a yummy treat that involved &#8211; you guessed it &#8211; blueberries! This cookie sort of looks like a mini pancake, but tastes more like a buttered blueberry muffin.</p>
<p><strong>2 cups flour<br />
1/2 teaspoon baking powder<br />
1 teaspoon cinnamon<br />
1/2 teaspoon salt<br />
3/4 cup (1 1/2 sticks) butter, softened<br />
3/4 cup sugar<br />
2 eggs<br />
1 teaspoon vanilla<br />
1 cup fresh blueberries, de-stemmed and dried</strong></p>
<p>Preheat oven to 350 degrees.</p>
<p>In a medium bowl, combine the flour, baking powder, cinnamon and salt. Set aside.</p>
<p>In a large bowl, cream together the butter and sugar. Beat in the eggs and vanilla. Stir in the flour mixture. Gently fold in the blueberries.</p>
<p>Drop dough by the spoonful onto an ungreased cookie sheet. Bake for 12-15 minutes, or until light golden brown. Remove from oven and let cool on a wire rack.</p>
<p>Yields about 2-3 dozen cookies.</p>
