I love cookies that have a slightly crispy outside and a nice chewy interior. Guess what? These cookies offer just that! It’s almost impossible to tell that they are flourless.

Since yesterday was national Blueberry Pancakes Day, I decided to create a yummy treat that involved – you guessed it – blueberries! This cookie sort of looks like a mini pancake, but tastes more like a buttered blueberry muffin.

These are definitely not your average cookie. They have such an array of flavors happening! Sweetness form the honey, a little kick from the ginger and a bit if tart from the lemon. I find the combination to be utterly divine!
