Chocolate covered pretzels. Salted caramel. Kettle corn. What do these have in common? That’s right – the amazing combination of sweet and salty. That’s exactly what these cupcakes offer. Candied bacon goodness in bite sized cakes topped with a complimenting maple flavored frosting. Can you say yum?

Candied Bacon Cupcakes:
5 bacon strips
1/4 cup brown sugar, packed
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
1 cup whole milk

Maple Frosting:
1/2 cup (1 stick) butter
2 tablespoons pure maple syrup
2 cups powdered sugar
1/4 teaspoon salt

Candied Bacon Cupcakes:
Preheat oven to 350 degrees. Line or grease 12 muffin cups. Line a baking pan with foil.

In a small bowl, add the brown sugar. Dredge the bacon strips so that they are evenly coated. Place the bacon on the lined baking pan. Bake for 15-20 minutes or until crisp. Once cooled, finely chop bacon into small pieces. Set aside.

In a medium bowl, combine the flour, baking powder and salt. Set aside.

In a large bowl, cream together the butter and sugar. Beat in eggs and vanilla. Stir in flour mixture in batches alternating with the milk. Fold in the bacon pieces.

Spoon batter evenly into prepared muffin cups. Bake for 25-30 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Maple Frosting:
In medium bowl, beat together the butter and sugar until blended. Gradually beat in the syrup until smooth.

Yields 12 cupcakes.
