I’ve been making a lot of soups lately. They are easy and filling, without being too heavy. I usually make enough for lunch the next day, too. Soups can also be very inexpensive to make, which is great if you’re unemployed like me! This recipe was inspired by soup recipes I found in a Mexican cookbook I have. My version is heartier and is a tad more spicy.

I’m a huge fan of dump-and-pour recipes, which inspired this recipe. (along with the gazillion cans of beans in my cupboard!) Just a little effort sauteing the garlic and onions, then everything else is easy-peasy and delicious!
