Since ground turkey was all I had in the freezer, that’s what I decided to make this recipe with. It came out fantastic! Moist delicious and very flavorful. I didn’t even miss the beef in this recipe at all.

1 pound ground turkey
1/2 can cream of mushroom soup
1/2 cup bread crumbs
1 egg
1/4 cup onion, chopped
2 cloves garlic, minced
2 tablespoons balsamic vinegar
1/4 cup chicken stock
2-4 tablespoons flour
1 cup whole milk
Salt and pepper, to taste

Preheat oven to 350 degrees. Line a baking pan with foil.

In a medium bowl, combine the ground turkey, soup, bread crumbs, egg, onion, garlic and balsamic vinegar until well incorporated. Shape mixture into 4 patties and lay in the prepared baking pan.

Bake for 30 minutes.

In a medium saucepan add the chicken broth. Add 2 tablespoons of the flour and whisk until smooth. Stir in the milk. Cook the mixture over medium heat until it thickens. Add more flour if needed. Season with salt and pepper.

Spoon gravy over steaks and serve.

Yields 4 servings.

True, turkey is extremely lean and and consequently can be very dry. However, I can assure you, my dear reader, that these meatballs are among the most moist, most delicious and most healthy you'll ever eat! They are perfect in soups, sandwiches, pastas, or eaten on their own. Make a batch and freeze them for later, or eat them right away!

I’m a huge fan of dump-and-pour recipes, which inspired this recipe. (along with the gazillion cans of beans in my cupboard!) Just a little effort sauteing the garlic and onions, then everything else is easy-peasy and delicious!

1 red onion, chopped
2 tablespoons olive oil
3 cloves garlic, minced
1 cup chicken broth
1/2 tablespoon chili powder
1 teaspoon red pepper flakes, more/less if desired
2 tablespoons Worcestershire sauce
2 tablespoons ketchup
1 pound turkey, cooked and shredded
2 (15-ounce) cans black beans, drained but not rinsed
2/3 cup fresh cilantro, chopped
Juice of a lime
Salt, to taste
Sour cream (optional)
Cheese (optional
Avocado (optional)

In a large stockpot, heat olive oil over medium heat. Add the onions and saute until they are translucent. Add the garlic, cook for 1 minute. Stir in the chicken broth, Worcestershire sauce, ketchup, chili powder, red pepper flakes, turkey and beans. Bring to a boil, then reduce heat to low and simmer for 10 minutes. Stir in cilantro and lemon juice. Season with salt.

Serve topped with sour cream, cheese or avocado if desired.

Yields 2-4 servings.
